This recipe combines two of a dieter's best friends: eggs and vegetables. It is low cal, low carb and very delicious.
Serves 3- 4
Ingredients
5 large eggs 425 cals
150g (1 cup) self-raising flour, sifted 475 cals
1 large zucchini, grated 50 cals
1 large onion, finely chopped 75 cals
1 carrot, grated 55 cals
4 mushrooms, chopped 20 cals
1 cup grated low-fat cheese 225 cals
Total: 1325 cals
Method
Preheat oven to 180°C. Grease a baking dish. Beat the eggs in a large bowl. Add the flour and beat until smooth, then add vegetables and cheese and stir to combine. Pour into the prepared dish and bake for 30 minutes or until cooked.
